Tonight you will love serving a cozy meal without your family's scandal: this stew of veal casserole is the perfect and easy meal dinner! I love that preparing dinner in the morning, when children are generally in a good mood (or at school), is the best thing I can do to put a hot meal on the table at 6 p.m., relatively stress free. Hooray for slow cookers!
The stew is one of my favorite things to cook during the fall and winter, and right here, or my Tuscan white bean chicken stew Crockpot, the slow-cooked Irish beef stew or the Mediterranean slow-cooked chicken stew are regulars from October to February. Try them all: you will love those cozy recipes!

For the meat
2 tablespoons oil
1.5 pounds of beef stew (in pieces)
1-2 teaspoons of salt (or less, depending on the type of broth you are using)
Black pepper (to taste)
2 tablespoons flour
For the sauce
2 large yellow onions (cut into wedges)
2 cloves of garlic (sliced)
2 teaspoons Italian seasoning
4 tablespoons tomato paste
1/4 cup red wine (Or use more broth)
2 cups beef stock
2 tablespoons Worcestershire sauce
1 tablespoon maple syrup
For the vegetables
3 large waxy potatoes (peeled and cut into pieces)
4 large carrots (peeled, with the ends trimmed and cut into pieces)
4 large celery sticks (cut and cut into thick slices)
1/2 pound brown mushrooms (clean and cut into quarters)
1/2 cup frozen peas (defrosting is not necessary)
